How to Cook Dried Anchovies in Tangy Masala-Step-by-Step Guide

Ingredients:

Octorika dry anchovy-100 grams
Onion-1 large, finely chopped
Tomato-1 large, finely chopped
Tamarind pulp-1 tablespoon
Garlic-6-8 cloves, crushed
Curry leaves-a few sprigs
Mustard seeds-½ teaspoon
Red chili powder-1 teaspoon
Coriander powder-1½ teaspoons
Turmeric powder-¼ teaspoon
Pepper powder-½ teaspoon (optional)
Oil-2 tablespoons
Salt-to taste
Water-as needed

 


 

Step-by-Step Cooking Method:

Clean and Soak the Dry Anchovy

Rinse the Octorika dry anchovies thoroughly in water 2–3 times to remove excess salt and sand. Soak them in warm water for 10–15 minutes and drain.

Sauté the Aromatics

Heat oil in a pan. Add mustard seeds, let them splutter. Then toss in curry leaves and crushed garlic. Sauté for a minute until aromatic.

Build the Masala Base

Add chopped onions and sauté until golden brown. Add tomatoes and cook till they soften. Now mix in red chili powder, coriander powder, turmeric, and pepper powder. Cook the masala till oil separates.

Add Tamarind & Dry Fish

Pour in the tamarind pulp with a little water and let it simmer for 2–3 minutes. Then add the soaked dry anchovy. Mix well and cook on low flame for 5–7 minutes until the masala coats the fish.

Simmer & Serve
